Hot and Spicty Tomatoe and Chilli Soup
Need a big pan!
Preferably huge or if not use 3/4 ingredients
2 large onions or 3 medium
half a pepper
3 tablespoons of red lentils (red ones don't need to soak)
2 organic beetroots
2 cans of tinned tomatoes
2 large carrots
1 medium potato
1 pint of vegetable stock use gravy granules or and add water to make a pint I used veggie gravy with 4 teaspoons of granules to 1 pint of water (hot) be careful!
3 tablespoons of veg oil
2 cloves garlic
2 chilli (not too hot type) sweet
Method.
chop onions, garlic and chilli and wash and chop the beetroot not need to peel
Wash and chop the rest of the veg
Scrub with a special bought brush (not a nail brush) or scrape with a knife.
I left the potato skin on
lightly fry the onion together with chopped beetroot Then add all the other chopped vegetables (chopped finely) stir and add lentils Stir and when getting hot quickly stir in two cans of tomatoes then the chill finely chopped and the garlic stir and simmer when bubbling add the pint of stock stir and let come to boil Then turn right down on simmer and put on lid go back and keep checking and stirring
Takes about 30 to 40 minutes
If you want a smoother tomato soup
take out what you want into a mixing bowl and blend with hand blender
You need to cover yourself and face (up to eyes) with a towel or get someone to do this
Mine spat at me but ok in enclosed blender but watch as boiling hot
Ok to eat as it is chunky.
Hot and spicy and should be enough for freezer or another day!
